Spanish Garlic Shrimp with White Beans and Crispy Kale

A lighter take on classic gambas al ajillo, this dish nestsles plump shrimp in a fragrant white bean and kale bed, all cloaked in sizzling garlic oil. The trick:infuse olive oil with garlic and chili over low heat until deeply aromatic, then add beans and kale to absorb those golden flavors before the shrimp meet their sizzling finish.

Ingredients

Serves 4

  • 350g jumbo shrimp, peeled and deveined
  • 1 can cannellini beans, drained and rinsed
  • 100g curly kale, stems removed and chopped
  • 6 garlic cloves, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 60ml dry white wine
  • 1 tsp smoked paprika
  • 1/2 tsp red chili flakes
  • 1 lemon, juiced and zested
  • Sea salt and freshly ground black pepper

Method

  1. Step 1: Prepare all ingredients before cooking. Drain and rinse the cannellini beans, roughly chop the kale into 2-inch pieces, slice the garlic paper-thin, and pat the shrimp dry with paper towels. This mise en place ensures smooth cooking.

  2. Step 2: Heat olive oil in a large skillet (12-inch cast iron ideal) over medium-low heat. Add sliced garlic, chili flakes, and smoked paprika. Stir continuously for 2-3 minutes until the garlic turns pale gold and releases an intensely sweet aroma—watch carefully to prevent burning. The low heat 'blooms' the spices without scorching.

  3. Step 3: Add the white wine to the pan (it will sizzle dramatically), then fold in the cannellini beans. Increase heat to medium and cook for 4-5 minutes, stirring gently occasionally, until the beans have absorbed some of the garlic oil and heated through. Season with half the salt.

  4. Step 4: Add the chopped kale to the pan, tossing to coat in the fragrant oil. Cover and cook for 2-3 minutes until the kale wilts and turns bright green but still retains a slight bite. Remove the lid and cook 1 minute more to let excess moisture evaporate. Transfer the bean-kale mixture to a serving bowl, leaving room in the pan.

  5. Step 5: Return the skillet to high heat. Add the shrimp in a single layer—they should sizzle immediately. Cook for 90 seconds per side until they turn pink and curl. The shrimp are done when they reach 63°C internal temperature (cut one to check: opaque throughout with no translucent center).

  6. Step 6: Arrange the shrimp over the bean-kale bed. Drizzle the pan juices over everything, add lemon zest and juice, and serve immediately. The residual heat from the shrimp will continue cooking the beans slightly. Serve with crusty whole grain bread to soak up the garlic oil.
