Provençal Fish Stew with Fennel and Saffron

A lighter interpretation of classic Bouillabaisse featuring delicate white fish, anise-scented fennel, and precious saffron threads creating a golden, aromatic broth that clings to each tender fish piece.

Ingredients

Serves 3

  • 450g skinless cod fillet, cut into 3-inch pieces
  • 2 medium fennel bulbs, sliced thin, fronds reserved for garnish
  • 400g canned diced tomatoes
  • 500ml low-sodium fish stock
  • 150ml dry white wine
  • 4 tbsp extra virgin olive oil
  • 3 medium shallots, finely diced
  • 4 cloves garlic, minced
  • 1/4 tsp saffron threads
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp fresh thyme leaves

Method

  1. Step 1: Place saffron threads in a small bowl with 3 tbsp warm water. Let steep for 10 minutes—this releases the golden pigments and floral aroma. The liquid will turn deeply amber.

  2. Step 2: Heat olive oil in a large deep skillet or Dutch oven over medium heat. Add diced shallots and cook until translucent, about 3 minutes. Listen for the gentle sizzle; avoid browning.

  3. Step 3: Add minced garlic and cook for 60 seconds until fragrant. The aroma should be sweet and pungent, not burnt. Pour in white wine and let it reduce by half, about 2 minutes—you'll see the surface shimmer and the alcohol note soften.

  4. Step 4: Add sliced fennel (reserve some delicate fronds for garnish) and cook for 4 minutes until slightly softened but still crisp-tender. The fennel should be translucent at the edges.

  5. Step 5: Pour in diced tomatoes and fish stock. Add the steeped saffron with its liquid, thyme, salt, and pepper. Bring to a gentle simmer—not a rolling boil. The broth should be a rich golden hue.

  6. Step 6: Gently nestle cod pieces into the simmering broth. Cook for 4-5 minutes until fish flakes easily and reaches 63°C internally. The flesh should appear opaque and lift apart with a fork.

  7. Step 7: Remove from heat immediately to prevent overcooking. Taste and adjust seasoning. Serve in deep bowls, spooning broth over fish. Garnish with reserved fennel fronds for fresh anise aroma.
