Greek-Inspired Lamb Burgers with Herb-Feta Yogurt Sauce

Crisp the lamb patties in a cast-iron skillet for a mahogany crust while the herb-feta yogurt sauce cools—its tangy creaminess slices through the rich, savory meat.

Ingredients

Serves 4

  • 500g ground lamb
  • 150g non-fat Greek yogurt
  • 50g crumbled feta cheese
  • 4 whole wheat burger buns
  • 1 red onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh mint, chopped
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 4 butter lettuce leaves
  • 1 sliced tomato
  • 1 tbsp olive oil
  • Salt and black pepper

Method

  1. Step 1: Combine Greek yogurt, crumbled feta, minced garlic, chopped dill, mint, lemon juice, and a pinch of salt in a small bowl. Whisk vigorously until smooth and airy. Set aside in the refrigerator—this sauce should be served cold to contrast the warm burger.

  2. Step 2: In a large mixing bowl, add ground lamb, diced red onion, remaining minced garlic, dried oregano, ground cumin, salt, and freshly cracked black pepper. Mix gently with clean hands until just combined—overworking creates dense, tough patties.

  3. Step 4: Divide the mixture into 4 equal portions (about 140g each). Shape into patties slightly larger than your buns, about 1cm thick, with a slight indentation in the center to ensure even cooking.

  4. Step 5: Heat a cast-iron skillet over medium-high heat for 2 minutes until it shimmers. Add olive oil and swirl to coat. Place patties in the pan—you should hear an immediate sizzle. Cook for 4-5 minutes per side for medium doneness (internal temp 63°C/145°F).

  5. Step 6: While patties rest for 2 minutes, toast the cut sides of whole wheat buns in the same skillet for 30 seconds until golden and crisp.

  6. Step 7: Assemble burgers: layer lettuce on the bottom bun, add the lamb patty, top with sliced tomato and remaining red onion, then generously spoon herb-feta yogurt sauce over the top. Close with bun top and serve immediately.
