Toasting walnuts until nutty and warm transforms a yogurt bowl. Cold, tangy Greek yogurt meets juicy berries, crisp walnuts, and floral honey.
Ingredients
Serves 2
2 cups (480g) plain nonfat Greek yogurt
1/2 cup (60g) walnut halves
1 cup (150g) mixed fresh berries (strawberries, blueberries, raspberries)
2 tbsp honey
1 tsp vanilla extract
1/2 tsp ground cinnamon
1 tsp lemon zest
Method
Step 1: Toast the walnuts: Place walnuts in a dry skillet over medium heat. Cook, stirring frequently, until they smell nutty and are lightly browned, 3-5 minutes. Watch closely—they can burn quickly. Transfer to a plate to cool, then roughly chop.
Step 2: In a medium bowl, stir together the Greek yogurt, vanilla extract, cinnamon, and lemon zest until smooth. Taste and adjust cinnamon if desired.
Step 3: Divide the yogurt mixture between two bowls. Top each with mixed berries and toasted walnuts.
Step 4: Drizzle 1 tablespoon of honey over each bowl. Serve immediately, while the walnuts are still crisp.
