Learn how to make authentic Turkish mercimek çorbası with fresh mint and lemon. A protein-rich, low-
A velvety Turkish mercimek çorbası where split red lentils melt into a golden soup, brightened with fresh spearmint and a squeeze of lemon. The technique lies in blooming cumin in butter and pureeing half the soup for that characteristic creamy texture.
Ingredients
Serves 4
- 300g red lentils, rinsed and drained
- 200g lean ground turkey
- 2 yellow onions, diced
- 3 carrots, diced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp extra virgin olive oil
- 1 liter low-sodium vegetable broth
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 bay leaf
- 1/2 cup fresh spearmint leaves, chopped
- 1 lemon, juiced (about 3 tbsp)
- 1 tsp sea salt
- 1/2 tsp black pepper
Method
-
Heat olive oil in a large Dutch oven over medium heat until it shimmers and releases a fruity aroma, about 30 seconds. Add diced onions and carrots, stirring to coat. Cook for 5-6 minutes until onions turn translucent and edges begin to caramelize, stirring occasionally.
-
Add minced garlic and cook for 1 minute until fragrant—you'll smell the sweet, mellow garlic aroma. Stir in tomato paste and cook for 2 minutes, stirring constantly, until it darkens slightly and loses its raw taste.
-
Crumble ground turkey into the pot and break apart with a wooden spoon. Cook for 4-5 minutes until turkey is no longer pink and has begun to brown slightly, creating little flavorful bits. The rendered fat will coat the vegetables.
-
Sprinkle in cumin, smoked paprika, cayenne, and black pepper. Bloom the spices by stirring for 30 seconds until they become aromatic—this releases their oils and removes any raw edge. Watch carefully to prevent burning.
-
Pour in the vegetable broth, add the bay leaf, and bring to a rolling boil. Add rinsed red lentils, which will sink to the bottom. Stir once, then reduce heat to medium-low and simmer uncovered for 15-18 minutes until lentils are completely tender and beginning to break down.
-
Remove from heat. Take out the bay leaf. Use an immersion blender to puree about half the soup directly in the pot—this creates the characteristic creamy texture while leaving some texture from the remaining lentils. Alternatively, blend half in a regular blender and return to pot.
-
Stir in fresh spearmint leaves and lemon juice. The mint will release its bright, cooling aroma instantly. Taste and adjust salt. The soup should have a silky, pourable consistency—if too thick, add water or extra broth.
-
Ladle into warm bowls. Drizzle each serving with a small swirl of olive oil and garnish with an extra mint leaf. Serve immediately with crusty whole-grain bread on the side.
