Herb-Crusted Turkey-Stuffed Bell Peppers with Tomato-Basil Sauce
Baked Mediterranean stuffed peppers with lean turkey, tomatoes, and herbs - a healthy 30-minute dinn
These vibrant bell pepper boats cradle a savory turkey-rice filling beneath a golden parmesan crust. The peppers soften beautifully in the oven, their natural sweetness intensifying as they meld with the tomato sauce.
Ingredients
Serves 4
- 4 large bell peppers, mixed colors
- 400g lean ground turkey
- 250g cooked white rice
- 1 can (400g) diced tomatoes, no-salt-added
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 240ml low-sodium chicken broth
- 30g parmesan cheese, grated
- 1 tbsp extra-virgin olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp sea salt
- 1/4 tsp black pepper, freshly ground
- Fresh basil leaves, for garnish
Method
-
Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Slice a thin strip from the base so they stand upright without wobbling. Set aside.
-
Heat olive oil in a large skillet over medium-high heat until shimmering. Add diced onion and cook, stirring occasionally, until translucent and softened, about 4 minutes. Listen for the gentle sizzle indicating proper temperature.
-
Add minced garlic and cook until fragrant, about 30 seconds. The aroma should be potent but not burnt. Immediately add ground turkey, breaking it apart with a wooden spoon.
-
Cook turkey until no longer pink, about 6-7 minutes. Use a spatula to drain excess liquid halfway through. Internal temperature should reach 165°F (74°C) before proceeding.
-
Add canned tomatoes, oregano, basil, salt, and pepper. Stir to combine. Let the mixture simmer for 2 minutes until slightly thickened. Remove from heat.
-
Fold in cooked rice and half the parmesan cheese. The filling should hold together when spooned but remain moist. Taste and adjust seasoning.
-
Stand the hollowed peppers in a baking dish just large enough to hold them upright. Spoon the turkey-rice filling equally into each pepper, mounding slightly on top.
-
Pour chicken broth around the base of the peppers (not over them, or the crust will become soggy). The liquid should come about 1/4 inch up the dish.
-
Cover tightly with foil and bake for 25 minutes. The peppers should be fork-tender when pierced at the base.
-
Remove foil, sprinkle remaining parmesan over each pepper's top. Return to oven, uncovered, for 10-12 minutes until the cheese turns golden and bubbly. Watch for a crisp, golden edge.
-
Rest for 3 minutes before serving. The filling will set slightly and the cheese crust will hold its shape. Garnish with fresh basil leaves.
-
Serve immediately with a side salad for a complete Mediterranean meal. The exposed edges of pepper should show slight caramelization where the cheese met the rim.
