Turkish Red Lentil Soup with Fresh Mint and Lemon

A silky red lentil soup inspired by Turkey’s beloved mercimek çorbası, finished with bright lemon zest and aromatic dried mint. The lentils break down to create a creamy texture without any dairy.

Ingredients

Serves 3

  • 200g red lentils, rinsed and drained
  • 1 medium onion, finely diced
  • 2 medium carrots, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 3 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1 tbsp dried mint
  • 1 lemon, juiced and zested
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Method

  1. Step 1: Heat 2 tablespoons olive oil in a large pot over medium heat. Add the diced onions and carrots, season with a pinch of salt. Sauté for 5-6 minutes until the onions become translucent and carrots soften slightly, stirring occasionally to prevent browning.

  2. Step 2: Add the minced garlic, ground cumin, and turmeric. Stir constantly for 60 seconds until the garlic becomes fragrant and the spices toast lightly—you'll smell the warm, earthy aroma awakening.

  3. Step 3: Pour in the rinsed red lentils and vegetable broth. Bring to a rolling boil, then reduce heat to medium-low. Partially cover and simmer for 15-18 minutes, stirring occasionally, until lentils completely break down and the soup thickens.

  4. Step 4: Remove from heat. Use an immersion blender to puree the soup until completely smooth, or transfer in batches to a standard blender. Return to pot if blending in batches.

  5. Step 5: Stir in the remaining 1 tablespoon olive oil, fresh lemon juice, and half the lemon zest. Add the dried mint and stir well. The heat from the soup will rehydrate the mint, releasing its green, herbaceous aroma.

  6. Step 6: Taste and adjust seasoning with salt and pepper. Serve immediately, garnished with remaining lemon zest and a drizzle of olive oil if desired. The soup should have a velvety consistency that coats a spoon.
