Lemon-Herb Seared Scallops over Zucchini Noodles with White Wine Butter

Golden seared scallops meet bright lemon and fragrant herbs atop silky zucchini noodles in this elegant 25-minute dinner. The key: ultra-hot pan, dry scallops, and a quick white wine butter sauce that coats every strand.

Ingredients

Serves 4

  • 350g large sea scallops, patted completely dry
  • 600g zucchini (about 4 medium)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 60ml dry white wine
  • 2 tbsp unsalted butter
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • 1/4 tsp red pepper flakes
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Method

  1. Step 1: Prep the scallops 10 minutes ahead. Remove scallops from refrigerator, pat completely dry with paper towels on both sides. Season with salt and pepper. This step is critical—moisture = steam = rubbery texture.

  2. Step 2: Spiralize zucchini into noodles. Cut off ends, spiralize or thinly slice lengthwise. Don't overcrowd the pan later; you want them to lightly sauté, not steam.

  3. Step 3: Heat a large stainless steel or cast iron skillet over high heat for 2 minutes until smoking. Add 2 tbsp olive oil, swirl to coat. The oil should shimmer and flow easily across the pan.

  4. Step 4: Place scallops in a single layer—work in batches if needed. Sear without moving for 2 minutes. You'll see golden-brown crust form on the bottom. Flip and cook another 1-2 minutes until just opaque. Remove to a plate, tent with foil.

  5. Step 5: Reduce heat to medium. Add remaining 1 tbsp olive oil and butter. Sauté garlic with red pepper flakes for 30 seconds until fragrant—watch closely, garlic burns fast. Pour in white wine, scraping up browned bits (fond). Simmer 1 minute to reduce by half.

  6. Step 6: Add lemon juice, zest, thyme, and parsley. Swirl to combine. The sauce should emulsify slightly. If it breaks, add a splash more wine and swirl vigorously.

  7. Step 7: Add zucchini noodles to the pan. Toss gently for 2-3 minutes until just tender but still slightly crisp. Season to taste.

  8. Step 8: Divide noodles among plates, arrange scallops on top. Spoon remaining sauce and herbs over everything. Serve immediately with lemon wedges.
