Spiced Chickpea & Pearl Couscous Bowl with Lemon Tahini
A bright Mediterranean grain bowl with warm cumin chickpeas and silky tahini dressing
There’s a particular satisfaction in building a bowl where every element plays a distinct role. This Mediterranean creation layers fluffy whole wheat pearl couscous beneath warm chickpeas that have developed a fragrant, golden crust from a brief stint in a screaming-hot skillet. The chickpeas carry earthy cumin warmth, the couscous offers a delicate nuttiness, and crisp cucumber and bright cherry tomatoes provide textural contrast and acidity. Crown it all with a silky tahini sauce that flows across the bowl in creamy ribbons—its richness tempered by sharp lemon and a whisper of garlic. The result is a composed plate that feels intentional and satisfying, yet comes together in under 30 minutes. This is the kind of dinner that looks impressive on the table but requires no theatrical effort from the cook.
Ingredients
Serves 2
- 1 cup dry whole wheat pearl couscous
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp tahini
- 2 tbsp fresh lemon juice
- 1 small clove garlic, finely grated
- 3-5 tbsp cold water
- 1/2 tsp ground cumin
- 2 tbsp extra virgin olive oil, divided
- 1/2 tsp kosher salt, plus more to taste
- 1/4 tsp freshly ground black pepper
- 1/2 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 cups baby arugula or mixed greens
- 2 tbsp fresh flat-leaf parsley, roughly chopped
- Pinch smoked paprika, for garnish
Method
-
Bring 1¼ cups water and ½ tablespoon olive oil to a rolling boil in a medium saucepan over high heat. Season with ¼ teaspoon kosher salt.
-
Add the dry couscous all at once, stir once, then immediately remove from heat. Cover tightly and let steam for exactly 5 minutes—no peeking. The grains should be tender but not mushy, with a slight bite remaining at the center.
-
While the couscous steams, whisk together tahini, lemon juice, grated garlic, remaining olive oil, 3 tablespoons cold water, ¼ teaspoon salt, and black pepper in a small bowl until smooth and pourable. Add remaining water a teaspoon at a time if the dressing is too thick—it should coat a spoon but still drip.
-
Fluff the cooked couscous with a fork, then fold in the parsley. The grains should separate easily and appear light and fluffy.
-
Heat a dry skillet over medium-high until smoking slightly, about 2 minutes. Add the drained chickpeas in a single layer and cook undisturbed for 2 minutes to develop golden spots. Add cumin and a pinch of salt, toss, and cook 1 minute more until fragrant and warmed through.
-
Divide the arugula between two shallow bowls. Mound the warm couscous in the center of each bowl, then arrange the chickpeas, cucumber, and tomatoes in distinct sections around the couscous.
-
Drizzle each bowl generously with the tahini dressing (about 2 tablespoons per serving). Finish with a light sprinkle of smoked paprika and serve immediately while the chickpeas are still warm.
