Lighter Osso Buco with Zesty Gremolata
How to make a healthier osso buco in 30 minutes with tender braised chicken and fresh gremolata topp
Tender chicken drumsticks braised in a fragrant tomato and white wine sauce, finished with a bright, herb-packed gremolata that cuts through the richness. This 30-minute version delivers the classic Milanese experience without the heavy calories.
Ingredients
Serves 4
- 600g chicken drumsticks, skin-on
- 1 large onion, roughly chopped
- 2 medium carrots, chunked
- 2 celery stalks, chunked
- 4 cloves garlic, minced
- 250ml low-sodium chicken broth
- 100ml dry white wine
- 400g canned diced tomatoes
- 1 bay leaf
- 4 sprigs fresh thyme
- 2 tbsp olive oil, divided
- 1 lemon, zested
- 30g fresh flat-leaf parsley, finely chopped
- Salt and freshly ground black pepper
Method
-
Heat 1 tbsp olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Season chicken drumsticks generously with salt and pepper. Sear skin-side down for 4-5 minutes until deep golden brown and crispy. Listen for the sizzle—this indicates proper browning. Flip and cook 2 minutes more. Transfer to a plate and set aside.
-
Reduce heat to medium. Add the remaining tbsp oil to the pot. Sauté onion, carrots, and celery for 4 minutes, stirring occasionally, until the onion turns translucent and the vegetables begin to soften. You want a fond to develop on the bottom of the pan—this is flavor gold.
-
Add minced garlic and cook for 30 seconds until fragrant. The aroma should be sweet and pungent, never burnt. Pour in the white wine, scraping up all the browned bits with a wooden spoon. Let it simmer for 2 minutes to cook off the raw alcohol taste.
-
Add the canned tomatoes, chicken broth, bay leaf, and thyme sprigs. Bring to a gentle simmer. Return the chicken drumsticks to the pot, submerging them partially in the liquid. Cover and cook for 20 minutes, flipping halfway through. The chicken is done when it pulls easily from the bone and reaches 75°C internally.
-
While the chicken braises, make the gremolata: combine finely chopped parsley, lemon zest, and a pinch of salt in a small bowl. The mixture should be vibrant green and aromatic.
-
Remove the pot from heat. Take the chicken out and let it rest for 2 minutes. Spoon the braised vegetables onto a serving platter, arrange chicken on top, and ladle some of the cooking liquid over. Sprinkle generously with the gremolata just before serving—the lemon zest will pop against the savory sauce.
