Braised Turkey Shanks with Gremolata and Saffron Vegetables

Tender turkey shanks braised in a aromatic white wine and vegetable broth, finished with a bright, herbaceous gremolata that cuts through the rich sauce. The key is low-and-slow cooking to achieve fork-tender meat while maintaining the classic Milanese essence.

Ingredients

Serves 4

  • 500g turkey drumsticks, bone-in
  • 1 medium onion, finely diced
  • 2 medium carrots, diced
  • 3 cloves garlic, minced
  • 200g canned diced tomatoes
  • 250ml low-sodium chicken broth
  • 60ml dry white wine
  • 1 tbsp olive oil
  • 1 tsp saffron threads
  • 1 bay leaf
  • 1 sprig fresh thyme
  • 15g flat-leaf parsley, finely chopped
  • 1 medium lemon, zested
  • 3g anchovy fillets, minced
  • Sea salt and black pepper to taste

Method

  1. Step 1: Pat turkey drumsticks completely dry with paper towels. Season generously with salt and pepper on all sides. This ensures proper browning and flavor development.

  2. Step 2: Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat until shimmering. Add turkey drumsticks and sear without moving for 4-5 minutes until deep golden brown on one side. Flip and brown the other side for 3-4 minutes. The meat should release easily when ready. Transfer to a plate and set aside.

  3. Step 3: Reduce heat to medium. Add diced onion and carrots to the same pot. Sauté for 5-6 minutes, stirring occasionally, until softened and lightly caramelized. The vegetables should be translucent with golden edges.

  4. Step 4: Add minced garlic and anchovy fillets. Cook for 1 minute until fragrant, stirring constantly. The anchovies will dissolve into the base, adding depth without fishiness.

  5. Step 5: Pour in white wine, scraping up any browned bits from the bottom. Let it reduce by half, about 2-3 minutes. You should smell the alcohol cooking off.

  6. Step 6: Add canned tomatoes, chicken broth, saffron threads, bay leaf, and thyme sprig. Bring to a gentle simmer.

  7. Step 7: Return turkey drumsticks to the pot, nestling them into the liquid. The liquid should come about halfway up the meat. Cover and reduce heat to low.

  8. Step 8: Braise for 25-30 minutes until turkey reaches 75°C internal temperature and pulls easily from the bone. Flip halfway through cooking.

  9. Step 9: While turkey braises, prepare the gremolata: combine finely chopped parsley, lemon zest, and a pinch of salt on a cutting board. Chop together until well combined. Set aside.

  10. Step 10: Remove turkey from pot. Increase heat to medium-high and reduce the braising liquid by half, about 5 minutes, until it coats the back of a spoon. Discard bay leaf and thyme sprig.

  11. Step 11: Plate turkey shanks on warm plates. Spoon reduced sauce over the meat. Top generously with gremolata, pressing it lightly into the sauce. Serve immediately with the reduced pan juices drizzled around.
