Moroccan Spiced Roasted Cauliflower with Tahini-Glazed Chicken Breast

Caramelized cauliflower with warm Moroccan spices meets tender chicken breast finished with a silky tahini-lemon drizzle. The contrast of smoky paprika, earthy cumin, and bright citrus creates depth.

Ingredients

Serves 4

  • 600g chicken breast, sliced 2cm thick
  • 1 large cauliflower, cut into florets
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 3 cloves garlic, minced
  • 3 tbsp tahini
  • 1 lemon, juiced
  • 30ml warm water
  • 1/4 tsp salt
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp black pepper

Method

  1. Step 1: Preheat oven to 220°C (425°F). Line a large baking sheet with parchment paper. The high heat is essential for caramelizing the cauliflower florets and achieving golden edges.

  2. Step 2: In a large bowl, combine cauliflower florets with 2 tbsp olive oil, smoked paprika, cumin, coriander, cinnamon, ginger, half the minced garlic, salt, and pepper. Toss until every floret is evenly coated with the spice mixture.

  3. Step 3: Spread cauliflower in a single layer on the baking sheet, ensuring pieces don't overlap. Roast for 12 minutes - look for darkened edges and a fragrant aroma filling your kitchen.

  4. Step 4: While cauliflower roasts, season chicken breast slices with remaining olive oil and a pinch of salt. Heat an oven-safe skillet over medium-high heat until shimmering. Sear chicken 2 minutes per side until golden crust forms - this build flavor foundation.

  5. Step 5: Push cauliflower to one side of the baking sheet. Nestle seared chicken among the florets. Return to oven for 12-15 minutes until chicken reaches 75°C (167°F) internally - use a meat thermometer for accuracy.

  6. Step 6: While chicken rests, whisk tahini with lemon juice, remaining garlic, and warm water until smooth and pourable. The sauce should coat a spoon - add more water if too thick.

  7. Step 7: Plate cauliflower and chicken. Drizzle with tahini sauce and garnish with fresh parsley. The sauce should pool slightly around the vegetables, creating a glossy finish.
