Spiced Chickpea and Couscous Bowl with Lemon Tahini
A 35-minute grain bowl with cumin-roasted chickpeas, fluffy couscous, and silky tahini dressing
There is something deeply satisfying about building a bowl where every element plays a distinct role. Here, golden chickpeas carry a warm cumin note and develop a pleasant crunch during their stint in a hot oven. Fluffy pearl couscous, stirred with olive oil and fresh parsley while still steaming, absorbs the herb’s bright flavor. Cool cucumber and sweet-tart cherry tomatoes cut through the richness, while a tahini sauce—brightened with lemon and garlic—ties everything together in silky ribbons. This bowl comes together in 35 minutes with mostly pantry and refrigerator staples, making it ideal for those evenings when you want something nourishing without spending much time at the stove. The contrast of temperatures and textures ensures each bite feels complete, not monotonous.
Ingredients
Serves 2
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 tablespoon olive oil, divided
- 1/2 teaspoon ground cumin
- 1/2 teaspoon kosher salt
- 1 cup whole wheat pearl couscous
- 1 1/4 cups water
- 3/4 teaspoon kosher salt, divided
- 2 tablespoons fresh flat-leaf parsley, finely chopped
- 1 small cucumber, diced
- 1 pint cherry tomatoes, halved
- 4 cups mixed salad greens
- 2 tablespoons tahini
- 1 tablespoon fresh lemon juice
- 1 small garlic clove, grated
- 2-4 tablespoons cold water
- Pinch of cayenne pepper
Method
-
Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
-
Toss the chickpeas with 1/2 tablespoon olive oil, cumin, and 1/2 teaspoon kosher salt until evenly coated. Spread in a single layer on the prepared baking sheet. Roast for 20-22 minutes, shaking the pan once halfway through, until the chickpeas are golden and slightly crisped at the edges.
-
While the chickpeas roast, bring 1 1/4 cups water and 1/2 teaspoon kosher salt to a boil in a medium saucepan. Stir in the couscous, reduce heat to low, and cover. Cook for 5 minutes without stirring, then remove from heat and let stand covered for 2 minutes. Fluff with a fork, then fold in the remaining 1/2 tablespoon olive oil, remaining 1/4 teaspoon kosher salt, and chopped parsley.
-
Make the tahini dressing: Whisk together the tahini, lemon juice, grated garlic, and cayenne in a small bowl. Add cold water a tablespoon at a time, whisking vigorously, until the sauce reaches a pourable but thick consistency—similar to heavy cream. Season with salt to taste.
-
Divide the salad greens between two shallow bowls. Top each with an equal portion of couscous, roasted chickpeas, diced cucumber, and halved tomatoes. Drizzle 2 tablespoons of tahini dressing over each bowl. Serve immediately.
