Golden Spiced Chickpea & Pearl Couscous Bowl with Lemony Tahini

A protein-rich Mediterranean bowl with crispy roasted chickpeas, fluffy couscous, and silky tahini-yogurt sauce

Golden Spiced Chickpea & Pearl Couscous Bowl with Lemony Tahini

There is something deeply satisfying about a bowl that comes together in forty minutes yet tastes like you spent much longer at the stove. This Mediterranean grain bowl centers on fluffy whole wheat pearl couscous—nutty, quick-cooking, and far more interesting than its instant couscous cousins—topped with chickpeas roasted until their edges blister and pop. The secret is that extra few minutes of roasting time: you want deep golden spots and that faint split in the chickpea skin, which creates pockets of crunch. A lemony tahini-yogurt sauce ties everything together, its tangy creaminess cutting through the earthy cumin on the chickpeas while adding significant protein. Fresh cucumber and bright cherry tomatoes bring juicy contrast against the warm grains. This bowl is the kind of dinner that makes you feel accomplished without breaking a sweat.

Ingredients

Serves 2

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tsp olive oil, divided
  • 1 tsp ground cumin
  • ¾ tsp kosher salt, divided
  • ¾ cup whole wheat pearl couscous
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 4 cups mixed salad greens
  • ⅓ cup plain Greek yogurt
  • 2 tbsp tahini
  • 2 tbsp fresh lemon juice
  • 1 small clove garlic, grated
  • 2 tbsp fresh parsley, minced

Method

  1. Position oven rack in center and preheat to 425°F. Line a rimmed baking sheet with parchment paper.

  2. Pat chickpeas thoroughly dry with clean kitchen towels—this step is non-negotiable for achieving maximum crispiness. Spread in a single layer on the prepared sheet.

  3. Toss the dried chickpeas with 1 tsp olive oil, cumin, and ¼ tsp salt. Roast for 20-25 minutes, shaking the pan halfway through, until golden-brown and blistered with some chickpeas split open.

  4. While chickpeas roast, bring 1 cup water and ¼ tsp salt to a boil in a medium saucepan. Add couscous, reduce heat to low, cover tightly, and simmer 12 minutes until liquid is absorbed. Remove from heat and let stand covered for 5 minutes.

  5. Uncover and fluff couscous with a fork. Stir in remaining 1 tsp olive oil and parsley. The grains should be tender with a slight bite (al dente).

  6. Whisk together Greek yogurt, tahini, lemon juice, garlic, and remaining ¼ tsp salt until smooth and pourable. If too thick, add water a teaspoon at a time—the sauce should coat a spoon thickly but drip smoothly.

  7. Divide greens between two shallow bowls. Mound couscous alongside, then arrange cucumber, tomatoes, and crispy chickpeas. Drizzle tahini-yogurt sauce generously over each bowl and serve immediately.
