Spiced Chickpea & Fluffy Couscous Bowls with Creamy Tahini

A vibrant Mediterranean grain bowl with warm spices, crisp vegetables, and a silky tahini drizzle

Spiced Chickpea & Fluffy Couscous Bowls with Creamy Tahini

There’s something deeply satisfying about building a bowl where every element has a distinct purpose: the fluffy, herb-kissed couscous as a canvas; the chickpeas roasted just enough to develop a subtle warmth from the cumin; the cucumber adding a refreshing crunch; and the tahini sauce pulling everything together with its rich, nutty finish. This Mediterranean creation takes shape in under 30 minutes, making it a weeknight workhorse without sacrificing the kind of layered flavors you’d expect from a weekend project. The tahini dressing—tangy from lemon, fragrant from fresh garlic—transforms humble ingredients into something that feels genuinely nourishing. Serve these bowls while the couscous is still warm so the heat gently wilts the greens at the edges, creating a textural contrast between the tender greens and the crisp cucumber.

Ingredients

Serves 2

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil, divided
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon kosher salt
  • 1 cup whole wheat couscous
  • 1 cup water
  • 2 tablespoons fresh parsley, finely chopped
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 4 cups mixed salad greens
  • 3 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, grated
  • 3 tablespoons water (adjust for consistency)
  • 1/4 teaspoon kosher salt

Method

  1. Pat the chickpeas dry with paper towels for better browning. Toss them with 1 teaspoon olive oil, cumin, and salt in a medium bowl until evenly coated.

  2. Bring water and remaining olive oil to a boil in a small saucepan with a pinch of salt. Pour in the couscous, stir once, then cover and remove from heat. Allow to steam for exactly 5 minutes until fluffy.

  3. While couscous steams, whisk together tahini, lemon juice, grated garlic, and salt. Stream in water gradually, whisking until the sauce reaches a pourable, dressing-like consistency. It should coat a spoon smoothly.

  4. Fluff the couscous with a fork and fold in the chopped parsley. Season with an extra pinch of salt if needed.

  5. Divide the salad greens between two shallow bowls. Arrange couscous in a mound on one side, then add spiced chickpeas, diced cucumber, and halved tomatoes in sections around the bowl. Drizzle generously with tahini sauce and serve immediately.
